The others have transformed it into a playing field dotted with small holes in which they strive to fill with white balls…
It is to the latter that I refer to today!

Grands Prix: François Moves
On to the Next Level
On another note, we are pleased and proud to announce that François Desrochers, Service and Conventions Manager at Le Grand Lodge, won the title of Tourist Employee of the Year on the regional level of the Grands Prix du tourisme québécois. He goes on to compete on the national level when the winner will be announced at next month’s gala presentation. We wish him the best.
Also, Pierre Renaud, head of our Pool Facility was one of the finalists in the category of Supervisor of the Year.

| Chef David has a fish-based recipe. |

| Tuna Ceviche |
|
|

| • |
10 bunches of fresh coriander, finely chopped |
|
 |
| • |
1 tablespoon of fresh ginger |
|
| • |
Juice of one or two limes, depending on their size |
|
| • |
3 tablespoons of olive oil |
|
| • |
2 tablespoons of coconut milk |
|
| • |
1 Jalapeno pepper, very finely chopped |
|
| • |
1 small cucumber, seeded, cored and diced into small cubes |
|
| • |
1 shallot, finely chopped |
|
| • |
1/2 orange pepper, cut into
fine julienne |
|
| • |
450 g of fresh Albacore tuna, diced into small cubes |
|
|
|
| |
In a mixing bowl, mix together the ginger, coriander, olive oil, coconut milk, lime juice and jalapeno. Add the remaining ingredients and toss together. Let the mixture marinate for at least 15 minutes.
Add salt and freshly ground pepper to taste when serving.

Sex on the Beach

3 oz cranberry juice |

3 oz pineapple juice |

¾ oz Peach Schnapps |
| • |
1 oz Vodka |
In a tall glass, add 4 to 5 ice cubes then pour in all four ingredients.
Garnish with half a slice of pineapple, a few cranberries on a small pick, a half slice of orange, 2 straws and why not a bamboo parasol for the
final touch!
