Amaretto Coffee Truffles

• 200 g of milk chocolate
• 4 teaspoons of soft butter
• 3 tablespoons of coffee
• 2 tablespoons of Amaretto
•3 egg yolks
•3 tablespoons of cocoa powder

Melt the chocolate, butter, coffee and Amaretto in a bain-marie. Remove from the heat. Stir until the mixture is smooth then add the egg yolks. Mix well until the mixture is smooth again. Place in the freezer for 20 minutes so the mixture can harden.

With a spoon, scrape the chocolate and roll them in your hands to form small balls then dip into the cocoa powder. Store them in an air tight container in the freezer.
