Crunchy Raw Beet Salad with Pears and Feta

- 4 beautiful beets, preferably of different colors, brushed, peeled and cut in julienne
- 3 ripe pears peeled and cut in julienne
- Oil and lemon dressing
- Sea salt and freshly ground pepper
- 200g of feta
- 1 bunch of fresh mint
- Sunflower seeds
Season the julienne of beets and pears first with the oil and lemon dressing then with salt and pepper. Taste to make sure the flavors are well balanced and add more lemon if needed to offset the sweetness of the pears and beets.
Plate then add the creamy feta and sprinkle with the mint leaves and sunflower seeds.
