Malgache Coffee

Add 1 oz of dark rum in a tall glass frosted with brown sugar.
Flambé the rum until the sugar melts then add:
- 6 oz of hot, strong coffee
- Whipped cream and vanilla sugar (add vanilla pulp to white sugar)
Then flambé ½ oz of Galliano (an Italian vanilla liqueur) and pour over the whipped cream.
Serve immediately.
